Weight Duck
I am thinking of roasting a duck for Xmas dinner – what weight duck do i need to feed 4 people?
We are all adults and it’s Xmas so I don’t want to have to skimp. Everywhere says ‘large duck’ but what weight is large?
Like the other young fellow, I to am a chef, 20+ yrs international experience, I would get 2 and one fully cooked will serve 2 nicely but a very sparse amount for 4, I have never seen ducks over 5 pounds, so the other must have found super ducks, and if you have leftover then fine, sauce are an option, they are fine just roasted and served with cranberry sauce, and the same garnishes as a turkey veg and potato wise, I however like to roast my potato in some of the rendered duck fat, and like brussel sprouts or european side with them braised sweet and sour red cabbage or creamed turnips.
